It’s that time of the week again! We’ve got a ton on the market this week.

If you haven’t tried the water spinach yet, we recommend. Lu Lu, the Burmese farmer who grows much of the water spinach, loves eating it raw in salads or cooking it like a leafy green. It’s high in nutrients too! And David Frease was a big fan as well! He’s happy to share more about his experience if you want to ask him in person!

We’ve also got tons of squash blossoms! If you haven’t gotten a chance to stuff them with ricotta and fry them yet..now’s your chance!

Radishes and greens are trickling in if you’re ready for the move into fall veggies!

Happy Friday! It was a busy week for us at the garden and on Thursday we welcomed special guest Trisha Yearwood and her crew as they filmed Growing Together to be featured on Trisha’s Southern Kitchen’s Thanksgiving episode. Stay tuned for more info about that as we get closer to the holidays!

And in other exciting news, we’ve got greens again!! Check out the baby mizuna and tokyo bekana we listed. Tender leaves perfect for summer salad even in this heat!

We can’t believe it’s already August! Although the heat and humidity seem to snap us back to reality quickly enough…

We’ve got some great items up this week – shishitos, cherry tomatoes, long beans, and tons of Roselle (the hibiscus leaves), which we recommend if you haven’t tried yet! A great citrus flavored green you can eat raw in salads or cooked!

Happy Friday! What a lovely week! We’ve been LOVING the cooler weather and hope you all have been too!

This week we’ve got the summer favorites for you – if you haven’t tried the Matt’s Wild Cherry Tomatoes, they are tiny and pure sweet goodness. Shishitos are coming in more abundantly and we’ve got squash, peppers, eggplant, and more all listed in the market.

Hope everyone had a great week! We keep hoping these small bits of rain will turn into big bits of rain with all the heat we’ve had! But the crops are still hanging in there and looking good! Our tomatoes are really hitting their stride – we’ve got some beautiful brandywine and red slicers and several varieties of super sweet cherries!

If you haven’t tried the long beans yet – they’re great blanched and served in a cold bean salad or sauteed as a side.
The thai basil adds a great sweet anise flavor to dishes and we’ve also got citrusy Hibiscus leaves (“lalchun” in Nepali and “chin baung” in Burmese) which is often called “sour leaf” for it’s sour taste. Great raw in salads or cooked as a green!

Growing Together - Reminder to Order!

The purple filet beans are beautiful,delicate, and delicious, as are the yellow wax. The heirloom white runner beans are a pole bean variety which is extremely tasty, but you do need to string them!

Can you believe we are already into July?
We have been blessed with plenty of rain so far this season, and the summer crops are loving it. We have tomatoes, beans, and peppers of all kinds coming coming in slowly but surely. Next up should be okra and bitter gourd. The greens are mostly done for now, but will return with the cooler temperatures of Fall.
A green we will continue to have is Lamb’s Quarters, what the farmers call “Bhetu” in their Nepali. This is a common wild edible in Tennessee. It is related to spinach and swiss chard, and can be used in similar ways. Try is sauteed on the side, in a frittata, or in this spread recipe below!

Lamb’s-quarters Spread
adapted From THE WILD VEGETARIAN COOKBOOK Eat it with cucumbers, crackers, or as a sandwich spread or a pasta topping.

2 cloves garlic, peeled
1 small red or white onion, peeled
2 cups lamb’s-quarters leaves
1 ripe avocado, peeled and pitted (I didn’t have one so I used 1/3 cup olive oil)
1/2 cup toasted nuts (I used almonds, the original called for 1 cup walnuts)
1/3 cup pitted kalamta olives (the original called for: One 6-ounce jar low-sodium pitted olives, drained)
2 tablespoons mellow (light-colored) miso
1 tablespoon chili paste or 1 teaspoon cayenne pepper, or to taste

1. Chop the garlic in a food processor or by hand.
2. Add the onion and chop.
3. Add the remaining ingredients and process or chop until finely chopped.

Lamb’s-quarters Spread will keep, tightly covered, in the refrigerator for 5 to 7 days.
Makes 2 1/2 cups
